  • 1 1/4 cups granulated sugar
  • 1/2 cup + 6 tbsp unsweetened cocoa powder
  • 1/2 tsp salt
  • 1/2 tsp vanilla extract
  • 2 large eggs
  • 1/2 cup flour
  • 1 cup white chocolate chips
  • 1/4 cup heavy cream PLUS 3/4 cup heavy cream (divided use)
  • 1 1/4 tsp unflavored powdered gelatin (1/2 packet)
  • 1 tbsp cold water
  • 1 1/2 tsp strawberry extract
  • Red food coloring
  • 1/3 cup milk chocolate chips
  • 1/4 cup heavy cream

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Melt butter in a saucepan over medium heat; stir in sugar, cocoa powder, eggs, salt, and vanilla until smooth. Fold in flour.
  3. Pour batter into the prepared pan and bake for 20-25 minutes; cool completely.
  4. For the mousse, bloom gelatin in cold water then dissolve in warm cream. Whip remaining cream until soft peaks form; fold in melted white chocolate and strawberry extract.
  5. Spread mousse over cooled brownies; refrigerate for at least two hours until set.
  6. Prepare ganache by heating milk chocolate chips with heavy cream until smooth; pour over set mousse layer.
  7. Chill again before slicing into squares.
