  • ¼ cup limoncello liqueur
  • 8 oz mascarpone cheese
  • 1 cup heavy cream
  • ½ cup powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare two greased and lined 8-inch round pans.
  2. Whisk together flour and baking powder; set aside.
  3. Beat egg whites until soft peaks form; set aside.
  4. In another bowl, beat egg yolks with sugar until pale; add lemon zest, juice, and limoncello.
  5. Gently fold in the dry ingredients followed by egg whites until no streaks remain.
  6. Bake for 22–25 minutes until a toothpick comes out clean; let cool.
  7. Prepare limoncello syrup by simmering limoncello with water and sugar until dissolved; cool before using.
  8. Brush cooled cake layers with syrup while still warm.
  9. Beat mascarpone cheese until smooth; gradually mix in cream, powdered sugar, and vanilla until fluffy.
  10. Assemble layers with mascarpone filling in between and refrigerate for at least four hours before serving.
