  • 2 tbsp granulated sugar for the swirl
  • 1 tbsp lemon juice for the swirl

Instructions

  1. Prepare the raspberry swirl by simmering fresh raspberries with sugar and lemon juice until thickened. Strain to remove seeds.
  2. Preheat your oven to 325°F (160°C).
  3. Make the crust: Combine graham cracker crumbs, sugar, and melted butter; press into a springform pan and bake for 8–10 minutes.
  4. In a mixing bowl, beat cream cheese until smooth; gradually add sugar, then mix in sour cream, lemon zest, lemon juice, vanilla extract, and eggs until just combined.
  5. Pour filling over the crust; drop spoonfuls of raspberry sauce on top and gently swirl.
  6. Bake for 55–65 minutes; let cool in the oven for one hour before refrigerating for at least four hours.
