- 50 g Brown Sugar
- 50 g White Sugar
- 1 large Egg
- 1 tsp Vanilla Extract
- 0.5 tsp Baking Soda
- 0.5 tsp Salt
- 150 g All-Purpose Flour (or gluten-free flour)
- 1 cup Mangoes (diced)
- 1 cup Sweet Rice
- 0.5 cup Coconut Milk
- Optional: 2 tbsp Sweetened Condensed Milk
Instructions
- Rinse sweet rice until water runs clear; soak in water for at least 4 hours or overnight.
- Steam soaked rice for about 30 minutes until tender.
- In a mixing bowl, cream butter with brown and white sugar until fluffy. Add egg and vanilla; mix well.
- Combine flour, baking soda, and salt in another bowl. Gradually add to the wet mixture.
- Fold in diced mango and steamed sweet rice along with coconut milk (and condensed milk if using).
- Preheat oven to 180°C (350°F). Line a baking sheet with parchment paper.
- Scoop tablespoon-sized portions onto the sheet, leaving space between them.
- Bake for about 15 minutes or until edges are lightly golden.
