  • 4 large whole wheat or spinach tortillas
  • 1 cup hummus
  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (thinly sliced)
  • 1/4 red onion (thinly sliced)
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 2 cloves, minced garlic
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Whisk well.
  2. Marinate the chicken in the mixture for at least 30 minutes in a resealable bag or shallow dish.
  3. Preheat the grill to medium-high heat and grill the marinated chicken for about 6-7 minutes per side until cooked through. Let it rest before slicing thinly.
