  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 lemon, juiced and zested
  • 1 can (14 oz) artichoke hearts, drained and quartered
  • 1/2 cup pitted green olives, halved
  • 1/2 cup chicken broth
  • 1/4 cup white wine (optional)
  • 1/2 red onion, sliced
  • 2 cloves garlic, minced
  • Fresh parsley, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts with salt, pepper, oregano, basil, and garlic powder.
  3. In a large ovenproof skillet, heat olive oil over medium-high heat. Sear the chicken for 3-4 minutes on each side until golden brown.
  4. Remove the chicken from the skillet and set aside. In the same skillet, sauté red onion and garlic for about 2 minutes.
  5. Stir in artichokes and olives, cooking for another 2 minutes.
  6. Add chicken broth, white wine (if using), lemon juice, and zest to the skillet; bring to a simmer.
  7. Return the chicken to the skillet, spooning sauce over each breast.
  8. Bake in the oven for 20-25 minutes until chicken is cooked through.
  9. Garnish with fresh parsley before serving.
