- 4 tablespoons salted butter
- 10 ounces marshmallows
- 1 teaspoon peppermint extract
- Green food coloring (about 10 drops)
- 3/4 cup mini chocolate chips
Instructions
- Grease a large mixing bowl with butter or cooking spray.
- Pour Rice Krispies cereal into the greased bowl and set aside.
- Melt butter in a medium-large saucepan over low heat.
- Add marshmallows and stir until coated; heat until three-quarters melted, then remove from heat and stir until fully melted.
- Mix in peppermint extract and food coloring until combined.
- Pour the marshmallow mixture over the cereal; toss gently to coat evenly.
- Let cool for 5-8 minutes, then stir in most of the mini chocolate chips (reserve some for topping).
- Transfer mixture to a greased 8-inch square pan, pressing firmly to shape.
- Sprinkle reserved chocolate chips on top; press in gently.
- Allow to cool at room temperature for at least 30 minutes before cutting into squares.
