  • 3 lbs organic chuck roast
  • 4 dried guajillo peppers
  • 4 dried ancho chiles
  • 1 onion
  • 4 garlic cloves
  • 12 organic corn tortillas
  • Shredded Oaxaca cheese
  • Fresh cilantro
  • Pico de Gallo

Instructions

  1. Soak guajillo and ancho chiles in hot water for 15 minutes. Blend with onion, garlic, crushed tomatoes, beef stock, apple cider vinegar, bay leaves, and spices until smooth.
  2. In a large pot, heat olive oil over medium heat. Season chuck roast with salt and pepper; brown on all sides (5-7 minutes). Add blended sauce and simmer on low for 150 minutes until tender.
  3. Shred the cooked beef using two forks. Heat corn tortillas in a skillet until warm. Fill each tortilla with shredded beef and sprinkle with Oaxaca cheese; cook until crispy.
  4. Serve garnished with fresh cilantro and alongside Pico de Gallo.
