- 1 – 2 lemons (zest + juice)
- 1 tbsp dried oregano
- 4 garlic cloves (minced)
- 1 small onion (finely diced)
- 1 cup long grain rice
- 1 1/2 cups chicken broth
- Fresh parsley or oregano (for garnish)
Instructions
- Marinate the chicken: Combine chicken thighs with lemon zest, lemon juice, oregano, garlic, salt, and olive oil in a ziplock bag. Mix well and refrigerate for at least 20 minutes.
- Sauté onions: In a large pot over medium heat, sauté the diced onion until translucent.
- Brown the chicken: Add marinated chicken to the pot skin-side down and sear until golden brown on both sides.
