  • 12 lemons (zest + juice)
  • 1 tbsp dried oregano
  • 4 garlic cloves (minced)
  • 1 small onion (finely diced)
  • 1 cup long grain rice
  • 1 1/2 cups chicken broth
  • Fresh parsley or oregano (for garnish)

Instructions

  1. Marinate the chicken: Combine chicken thighs with lemon zest, lemon juice, oregano, garlic, salt, and olive oil in a ziplock bag. Mix well and refrigerate for at least 20 minutes.
  2. Sauté onions: In a large pot over medium heat, sauté the diced onion until translucent.
  3. Brown the chicken: Add marinated chicken to the pot skin-side down and sear until golden brown on both sides.
  4. Add rice: Remove chicken temporarily. Stir uncooked rice into the pot until coated with juices. Pour in broth and water; season with additional oregano, salt, and pepper.
  5. Cook together: Place browned chicken back on top of the rice mixture. Bring to a simmer, cover tightly, reduce heat to low, and cook for about 30 minutes until rice is tender.
  6. Serve: Fluff rice with a fork and garnish with parsley or oregano and fresh lemon zest before serving.
