- 1½ cups heavy whipping cream
- 2 cups shredded coconut (sweetened or unsweetened)
- Pink food coloring
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- In one bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt. In another bowl, cream butter and sugar until fluffy. Add eggs and vanilla; mix well.
- Alternately mix in dry ingredients and buttermilk into the creamed mixture. Stir in hot water until smooth.
- Pour batter into prepared pan and bake for 25–30 minutes. Cool completely.
- For frosting, whip heavy cream with powdered sugar and vanilla until fluffy; spread over cooled cake.
- Mix shredded coconut with pink food coloring and sprinkle over frosting. Chill before serving.
