  • ½ cup cocoa powder
  • ½ cup unsalted butter (softened)
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1½ cups heavy whipping cream
  • 2 cups shredded coconut (sweetened or unsweetened)
  • Pink food coloring

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In one bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt. In another bowl, cream butter and sugar until fluffy. Add eggs and vanilla; mix well.
  3. Alternately mix in dry ingredients and buttermilk into the creamed mixture. Stir in hot water until smooth.
  4. Pour batter into prepared pan and bake for 25–30 minutes. Cool completely.
  5. For frosting, whip heavy cream with powdered sugar and vanilla until fluffy; spread over cooled cake.
  6. Mix shredded coconut with pink food coloring and sprinkle over frosting. Chill before serving.
