Ingredients

  • 2 eggs
  • 1 egg yolk
  • 1 cup milk
  • 1/2 cup water
  • pinch salt
  • 3 Tablespoons butter, melted
  • 1 teaspoon sugar
  • dash of vanilla extract
  • 1 cup all-purpose flour
  • 1½ Tablespoon Cocoa Powder
  • red food color
  • extra butter to cook with
  • Raspberry Preserves
  • 16 ounces cream cheese, softened
  • ½ teaspoon lemon juice
  • 2 cups powdered sugar
  • ½ cup ricotta cheese
  • 1 teaspoon vanilla extract
  • 2 Tablespoon strong coffee
  • 1 teaspoon rum (optional)
  • Nutella (or chocolate)

Instructions

  1. In a blender, combine 2 whole eggs, 1 egg yolk, 1 cup milk, 1/2 cup water, pinch salt, 3 Tablespoons melted butter, 1 teaspoon sugar, and dash of vanilla extract; pulse until foamy.
  2. Add 1 cup all-purpose flour, 1½ Tablespoon cocoa powder, and red food color; blend until smooth. Let rest for 1 hour.
  3. Prepare the sweet cream cheese filling by mixing softened cream cheese, ricotta cheese, powdered sugar, lemon juice, coffee (optional), and vanilla until smooth.
  4. Heat a non-stick frying pan over medium heat and coat with butter. Pour in batter to form crepes; cook until set and lightly golden on both sides.
  5. Assemble crepes by spreading raspberry preserves and sweet cream cheese filling before folding.
