  • 1 tablespoon fresh lemon juice (for peach puree)
  • 1 1/2 cups freshly squeezed lemon juice
  • 1 cup granulated sugar (for simple syrup)
  • 46 cups cold water
  • Fresh peach slices for garnish
  • Lemon wheels for garnish
  • Mint sprigs for garnish
  • Ice cubes for serving

Instructions

  1. Prepare Peaches: Wash, pit, and dice peaches. In a saucepan, combine diced peaches, 1/2 cup sugar, 1/2 cup water, and lemon juice. Simmer for 10-15 minutes until soft.
  2. Make Puree: Mash the mixture and strain through a fine-mesh sieve to obtain smooth peach puree; cool to room temperature.
  3. Prepare Simple Syrup: Heat 1 cup sugar with 1 cup water in another saucepan until dissolved; cool completely.
  4. Combine: Juice lemons to yield about 1 1/2 cups fresh juice. In a pitcher, mix the cooled simple syrup with lemon juice and the cooled peach puree. Stir in cold water to taste.
  5. Chill & Serve: Refrigerate for at least 30 minutes before serving over ice with garnishes.
