  • 5 tbsp white sugar
  • 10 tbsp unsalted butter, melted
  • 32 oz cream cheese, softened
  • 3/4 cup white sugar
  • 1/2 cup liquid honey
  • 1 tbsp vanilla
  • 3/4 tsp kosher salt
  • 3 large eggs (room temperature)
  • 2 large egg yolks (room temperature)
  • 3/4 cup heavy cream
  • 3/4 cup sour cream
  • 1 tbsp cornstarch
  • 1/2 cup full-fat sour cream (for topping)
  • 1/2 cup liquid honey (for topping)
  • 1/41/2 tsp table salt (to desired saltiness)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine graham cracker crumbs, white sugar, and melted unsalted butter. Stir until well combined. Press this mixture firmly into the bottom of a springform pan to form an even crust.
  3. In a large bowl, beat the softened cream cheese using an electric mixer until smooth. Gradually add in the remaining white sugar, then mix in the first portion of liquid honey, followed by the vanilla extract and kosher salt.
  4. Add in the eggs one at a time, mixing well after each addition. Gently fold in heavy cream, sour cream, and cornstarch until just combined.
  5. Pour the filling over the prepared crust in the springform pan. Bake in preheated oven for about 90 minutes or until set but slightly jiggly in the center.
  6. Remove from oven and let cool at room temperature for 30 minutes. Then refrigerate for at least four hours or overnight before serving.
  7. Before serving, mix together full-fat sour cream, remaining liquid honey, and desired amount of table salt. Spread this mixture over chilled cheesecake for added flavor.
