  • 1 lb uncooked Italian sausage
  • 1 small white onion (thinly sliced)
  • 23 garlic cloves (minced)
  • 1 8 oz can tomato puree
  • 1 14 oz can crushed tomatoes
  • 13 cups chicken broth (to desired consistency)
  • 1 cup cream cheese (chopped and softened)
  • ¼ cup grated parmesan cheese
  • Kosher salt and black pepper (to taste)

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sauté onions until softened (4-5 minutes).
  2. Add the sausage, breaking it up with a spatula until browned. Stir in minced garlic and cook for another minute.
  3. Pour in tomato puree, crushed tomatoes, chicken broth, and dried basil. Bring to a boil, then reduce heat and simmer for 10-15 minutes.
  4. Stir in cream cheese and half of the parmesan until melted and smooth; adjust consistency with more broth if needed.
  5. Season with salt and pepper to taste before serving topped with remaining parmesan and fresh parsley.
