  • 4 boneless, skinless chicken breasts
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons minced garlic
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper, to taste
  • 1 cup fresh baby spinach, chopped
  • 4 large tortillas
  • Olive oil, for drizzling
  • Fresh herbs, for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  2. In a mixing bowl, combine mozzarella cheese, Parmesan cheese, minced garlic, onion powder, smoked paprika, oregano, basil, salt, and pepper.
  3. Slice each chicken breast to create a pocket without cutting through.
  4. Stuff each pocket with the cheese mixture and some chopped spinach if desired.
  5. Wrap each stuffed chicken breast in a tortilla and secure if necessary.
  6. Place seam-side down in the baking dish; drizzle with olive oil.
  7. Cover with foil and bake for 20 minutes; then remove foil and bake an additional 15–20 minutes until cooked through.
