  • 2 cups butternut squash, peeled and diced
  • 1 pound steak (sirloin or ribeye), cut into cubes
  • 1 cup quinoa, rinsed
  • 3 garlic cloves, sautéed
  • 1/2 cup heavy cream or Greek yogurt
  • 1 tablespoon chopped fresh parsley
  • 1/2 teaspoon chopped thyme
  • 1/2 teaspoon chopped rosemary
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat oven to 400°F (200°C). Toss butternut squash with olive oil, salt, pepper, and herbs; spread on a baking sheet and roast for 25–30 minutes.
  2. In a medium saucepan, bring 2 cups water to boil. Add quinoa; cover and simmer for about 15 minutes until fluffy.
  3. Heat a cast iron skillet over medium-high heat. Sear seasoned steak cubes in olive oil for 2–3 minutes per side until browned; let rest.
  4. Blend sautéed garlic with heavy cream or Greek yogurt and herbs until smooth.
  5. To assemble, place quinoa in bowls, layer with roasted squash and steak bites, then drizzle with sauce.
