Ingredients
- ¾ to 1 lb sushi-grade yellowfin tuna
- 3 tablespoons white sesame seeds
- 2 tablespoons black sesame seeds
- 1 tablespoon canola oil
- 2 tablespoons mirin
- 2 teaspoons white miso
- 3 teaspoons grated fresh ginger
- 1/3 cup plus 2 tablespoons fresh orange juice
- 1 tablespoon low-sodium soy sauce
- 1 tablespoon plus 2 teaspoons rice wine vinegar
- 1/8 teaspoon red-pepper flakes
- ¼ teaspoon sesame oil
Instructions
- In a mixing bowl, whisk together mirin, miso, grated ginger, orange juice, soy sauce, rice wine vinegar, red-pepper flakes, and sesame oil until smooth.
- Cut the tuna into 2–3 rectangular pieces. Mix white and black sesame seeds on a plate; press each piece of tuna into the seeds to coat evenly.
- Heat canola oil in a skillet over medium-high heat. Sear each side of the coated tuna for about 20 seconds until golden brown. Transfer to paper towels to drain excess oil.
- Allow the tuna to rest for a couple of minutes before slicing it into ¼-inch thick pieces. Serve with the prepared orange ginger soy sauce.
