Ingredients
- 4 salmon fillets
- 5 tbsp olive oil (divided)
- 4 cups spinach (fresh or frozen)
- 6 oz feta cheese (crumbled)
- 1/3 cup Parmesan cheese (grated)
- Salt and black pepper
- Italian seasoning, paprika, cayenne pepper, garlic powder
Instructions
- Preheat oven to 375°F (190°C).
- Butterfly each salmon fillet by slicing horizontally, then season with salt and pepper.
- In a mixing bowl, combine 1 tbsp olive oil, spinach, Italian seasoning, paprika, cayenne pepper, feta cheese, Parmesan cheese, roasted red peppers, and garlic powder. Mix well.
