  • 8 ounces reduced-fat cream cheese
  • 3/4 cup plain 0% Greek yogurt
  • 2 large egg whites
  • 1/3 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon vanilla extract
  • 12 teaspoons coconut extract
  • 1/3 cup sliced almonds
  • 1/3 cup shredded unsweetened coconut

Instructions

  1. Preheat the oven to 350°F (175°C). Line an 8×8 baking dish with foil.
  2. Combine graham cracker crumbs and melted butter in a bowl; press into the bottom of the dish. Bake for 8-9 minutes.
  3. In another bowl, beat softened cream cheese until smooth. Add Greek yogurt, sugar, egg whites, and flour; mix until well combined. Stir in vanilla and coconut extracts.
  4. Pour filling over the crust and bake for 20 minutes; cover with foil and bake for an additional 5 minutes.
  5. Toast sliced almonds and shredded coconut in a pan over medium-low heat until golden.
  6. Cool the bars for about 5 minutes; top with toasted almond-coconut mixture. Chill in the refrigerator for at least 4 hours before cutting into squares.
