  • 3 pounds beef chuck roast (cut into 1-inch cubes)
  • 2 tablespoons olive oil
  • 1 large yellow onion (diced)
  • 2 tablespoons tomato paste
  • 2 (14.5 ounce) cans fire-roasted diced tomatoes
  • 1 (8 ounce) can tomato sauce
  • 2 cups beef broth
  • 3 tablespoons chili powder
  • 1 tablespoon smoked paprika
  • 1 tablespoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons masa harina or cornmeal (for thickening)

Instructions

  1. Sear the beef in olive oil in a large skillet until browned. Transfer to slow cooker.
  2. In the same skillet, sauté onions and tomato paste. Add remaining ingredients and mix well.
  3. Pour the mixture over the beef in the slow cooker. Cook on low for 7-8 hours or high for 3-4 hours.
  4. About 30 minutes before serving, stir in masa harina to thicken.
  5. Serve with desired toppings.
