- 3 pounds beef chuck roast (cut into 1-inch cubes)
- 2 tablespoons olive oil
- 1 large yellow onion (diced)
- 2 tablespoons tomato paste
- 2 (14.5 ounce) cans fire-roasted diced tomatoes
- 1 (8 ounce) can tomato sauce
- 2 cups beef broth
- 3 tablespoons chili powder
- 1 tablespoon smoked paprika
- 1 tablespoon ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons brown sugar
- 1 tablespoon Worcestershire sauce
- 2 tablespoons masa harina or cornmeal (for thickening)
Instructions
- Sear the beef in olive oil in a large skillet until browned. Transfer to slow cooker.
- In the same skillet, sauté onions and tomato paste. Add remaining ingredients and mix well.
- Pour the mixture over the beef in the slow cooker. Cook on low for 7-8 hours or high for 3-4 hours.
- About 30 minutes before serving, stir in masa harina to thicken.
