  • 1 tbsp Olive Oil
  • 1 tbsp Smoked Paprika
  • 1 tbsp Garlic Powder
  • 1 tbsp Onion Powder
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1 cup Beef Broth
  • 1 cup Shredded Cheddar Cheese
  • 1/2 cup Shredded Monterey Jack Cheese
  • 1/2 cup Beer (IPA or Stout)
  • 1/4 cup Sour Cream
  • 1 tbsp Dijon Mustard
  • 1 tsp Worcestershire Sauce
  • 1 lb Refrigerated Pizza Dough (package)
  • 1 Egg (beaten)
  • Coarse Salt (for sprinkling)

Instructions

  1. Preheat your smoker or grill to 225°F (107°C) and rub the brisket with olive oil, smoked paprika, garlic powder, onion powder, salt, and black pepper. Cook until tender (approximately 12 hours), then shred.
  2. In a bowl, mix cheddar cheese, Monterey Jack cheese, beer, sour cream, Dijon mustard, and Worcestershire sauce until smooth.
  3. Roll out pizza dough into squares and place shredded brisket and beer cheese filling in each square. Fold the dough over the filling and seal.
  4. Preheat the oven to 400°F (200°C). Place pretzel bombs on a baking sheet lined with parchment paper, brush with beaten egg, sprinkle with coarse salt, and bake for about 20 minutes until golden brown.
