  • 1/2 cup whole milk
  • 1/2 cup of water
  • 2 tsp dry active yeast
  • 410 grams of bread flour (2 1/2 cups plus 3 Tbsp of flour)
  • 1/3 cup packed brown sugar
  • 1 tsp salt
  • 1/2 teaspoon baking powder
  • 2 tbsp unsalted butter (melted)
  • 2 cups of warm water
  • 2 tbsp baking soda
  • 6 tbsp melted unsalted butter (for dipping after baking)
  • Coarse pretzel salt (for topping before baking)

Instructions

  1. Warm the milk and water until lukewarm. Combine with yeast and let sit for 5 minutes until frothy.
  2. In another bowl, mix bread flour, brown sugar, salt, and baking powder. Gradually add to the yeast mixture while stirring.
  3. Knead dough on a floured surface for 5–7 minutes until smooth. Place in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 30 minutes or until doubled in size.
  4. Preheat oven to 425°F (220°C). Roll dough into 24-inch ropes and twist into pretzel shapes.
  5. Boil water with baking soda in a large pot; drop pretzels in for 30 seconds then remove with a slotted spoon.
  6. Place on a parchment-lined baking sheet, brush with melted butter, sprinkle coarse salt, and bake for about 8 minutes until golden brown.
