  • 1 pound large mushrooms (Cremini or Portobello)
  • 1 cup cooked chicken (finely diced or shredded)
  • 5 ounces fresh spinach (roughly chopped)
  • 4 ounces cream cheese (softened)
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup shredded mozzarella cheese
  • 1/4 cup breadcrumbs (Panko preferred)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Clean the mushrooms and remove the stems.
  2. Sauté chopped onion, garlic, and mushroom stems in olive oil until softened. Add spinach and cook until wilted.
  3. In a bowl, combine the spinach mixture with cream cheese, chicken, Parmesan, mozzarella, breadcrumbs, salt, and pepper.
  4. Stuff each mushroom cap generously with the filling mixture.
  5. Top with extra breadcrumbs and Parmesan. Drizzle with olive oil if desired.
  6. Bake for 20-25 minutes until golden brown and mushrooms are tender.
