- 1 pound large mushrooms (Cremini or Portobello)
- 1 cup cooked chicken (finely diced or shredded)
- 5 ounces fresh spinach (roughly chopped)
- 4 ounces cream cheese (softened)
- 1/4 cup grated Parmesan cheese
- 1/4 cup shredded mozzarella cheese
- 1/4 cup breadcrumbs (Panko preferred)
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C). Clean the mushrooms and remove the stems.
- Sauté chopped onion, garlic, and mushroom stems in olive oil until softened. Add spinach and cook until wilted.
- In a bowl, combine the spinach mixture with cream cheese, chicken, Parmesan, mozzarella, breadcrumbs, salt, and pepper.
- Stuff each mushroom cap generously with the filling mixture.
- Top with extra breadcrumbs and Parmesan. Drizzle with olive oil if desired.
- Bake for 20-25 minutes until golden brown and mushrooms are tender.
