- 8 oz block feta cheese
- 12 oz bag frozen spinach (thawed)
- 1 cup plain whole-milk Greek yogurt
- ½ cup mayonnaise (preferably avocado oil mayo)
- 2 garlic cloves (grated)
- 1 cup sliced pepperoncini peppers (roughly chopped)
- 1½ cups grated fresh mozzarella cheese (divided)
Instructions
- Preheat the oven to 400°F.
- Grease an 8×8-inch baking dish with non-stick cooking spray.
- In a large bowl, crumble the feta cheese with a fork. Squeeze excess moisture from thawed spinach and add it to the bowl along with Greek yogurt, mayonnaise, grated garlic, crushed red pepper flakes, chopped pepperoncini, and 1 cup of mozzarella cheese. Mix until well combined.
- Transfer the mixture to the prepared baking dish and top with the remaining mozzarella cheese.
- Bake for 26-30 minutes until bubbly and golden around the edges. For extra crispiness, broil for an additional 2 minutes.
- Serve warm with your choice of dippers.
