- 12 oz rigatoni pasta
- 2 tbsp olive oil (extra virgin)
- 1 lb steak (sirloin or ribeye, cut into bite-sized pieces)
- 1 medium onion (diced)
- 1 medium bell pepper (diced)
- 3 cloves garlic (minced)
- 1 cup heavy cream
- 1 cup blue cheese (crumbled)
- 1 cup mozzarella cheese (shredded)
- Fresh parsley (for garnish)
Instructions
- Cook rigatoni in a large pot of salted boiling water until al dente, about 10-12 minutes. Drain and set aside.
- In a skillet, heat olive oil over medium-high heat. Sear steak pieces until browned, about 3-4 minutes. Remove from skillet.
- Sauté onion and bell pepper in the same skillet until softened, then add garlic and cook for another minute.
- Lower heat and add heavy cream to deglaze the pan. Stir in blue cheese, oregano, salt, and pepper; cook until melted and slightly thickened.
- Return steak to the skillet, add cooked rigatoni, and mix well to coat evenly with sauce.
- Transfer to a greased baking dish and sprinkle mozzarella on top.
