  • 12 oz rigatoni pasta
  • 2 tbsp olive oil (extra virgin)
  • 1 lb steak (sirloin or ribeye, cut into bite-sized pieces)
  • 1 medium onion (diced)
  • 1 medium bell pepper (diced)
  • 3 cloves garlic (minced)
  • 1 cup heavy cream
  • 1 cup blue cheese (crumbled)
  • 1 cup mozzarella cheese (shredded)
  • Fresh parsley (for garnish)

Instructions

  1. Cook rigatoni in a large pot of salted boiling water until al dente, about 10-12 minutes. Drain and set aside.
  2. In a skillet, heat olive oil over medium-high heat. Sear steak pieces until browned, about 3-4 minutes. Remove from skillet.
  3. Sauté onion and bell pepper in the same skillet until softened, then add garlic and cook for another minute.
  4. Lower heat and add heavy cream to deglaze the pan. Stir in blue cheese, oregano, salt, and pepper; cook until melted and slightly thickened.
  5. Return steak to the skillet, add cooked rigatoni, and mix well to coat evenly with sauce.
  6. Transfer to a greased baking dish and sprinkle mozzarella on top.
  7. Bake at 375°F (190°C) for 15-20 minutes until cheese is melted and golden.
