- 12 oz rigatoni pasta
- 2 tbsp extra virgin olive oil
- 1 lb sirloin or ribeye steak (cut into bite-sized pieces)
- 1 medium onion (diced)
- 1 medium bell pepper (diced)
- 3 cloves garlic (minced)
- 1 cup heavy cream
- 1 cup crumbled blue cheese
- 1 tsp dried oregano
- 1 tsp salt
- 0.5 tsp black pepper
- 1 cup shredded mozzarella cheese
- 0.25 cup fresh parsley (chopped)
Instructions
- Cook the rigatoni in a large pot of salted boiling water until al dente (about 10-12 minutes). Drain and set aside.
- In a skillet, heat olive oil over medium-high heat. Sear steak pieces until browned on all sides (about 3-4 minutes). Remove and set aside.
- In the same skillet, sauté diced onion and bell pepper until softened (about 5 minutes). Add minced garlic and cook for an additional minute.
- Lower heat to medium, pour in heavy cream, and deglaze the pan. Stir in blue cheese, oregano, salt, and black pepper until melted and slightly thickened.
- Return steak to the skillet and combine with the sauce and rigatoni.
- Transfer to a greased baking dish, top with mozzarella cheese, and bake at 375°F for 15-20 minutes until golden brown.
- Garnish with chopped parsley before serving.
