Description

Strawberry Parfaits are a stunning yet effortless dessert that perfectly balances fluffy chocolate angel food cake, luscious homemade whipped cream, and fresh strawberries.


Ingredients

  • ¾ cup cake flour
  • ½ cup unsweetened cocoa powder
  • 1 ½ cups sugar (divided)
  • 1 ½ cups egg whites (room temperature)
  • 1 ½ teaspoon cream of tartar
  • ¼ teaspoon salt
  • 1 ½ teaspoon vanilla extract
  • ½ teaspoon almond extract
  • 2 cups heavy whipping cream
  • 1 pound fresh strawberries (diced)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In one bowl, mix cake flour, cocoa powder, and 1 cup sugar. In another bowl, beat egg whites until foamy; add cream of tartar and salt until soft peaks form. Gradually add remaining sugar until stiff peaks form.
  3. Gently fold in the flour mixture using a rubber spatula until just combined.
  4. Pour batter into an ungreased pan and bake for about 35 minutes or until lightly browned. Cool completely before removing.
  5. Whip heavy cream, sugar, and vanilla until soft peaks form.
  6. Cut cooled cake into cubes and layer in parfait glasses with whipped cream and diced strawberries.
