- ¾ cup cake flour
- ½ cup unsweetened cocoa powder
- 1 ½ cups sugar (divided)
- 1 ½ cups egg whites (room temperature)
- 1 ½ teaspoon cream of tartar
- ¼ teaspoon salt
- 1 ½ teaspoon vanilla extract
- ½ teaspoon almond extract
- 2 cups heavy whipping cream
- 1 pound fresh strawberries (diced)
Instructions
- Preheat the oven to 350°F (175°C).
- In one bowl, mix cake flour, cocoa powder, and 1 cup sugar. In another bowl, beat egg whites until foamy; add cream of tartar and salt until soft peaks form. Gradually add remaining sugar until stiff peaks form.
- Gently fold in the flour mixture using a rubber spatula until just combined.
- Pour batter into an ungreased pan and bake for about 35 minutes or until lightly browned. Cool completely before removing.
- Whip heavy cream, sugar, and vanilla until soft peaks form.
- Cut cooled cake into cubes and layer in parfait glasses with whipped cream and diced strawberries.
