  • 2 tablespoons extra virgin olive oil
  • 1.5 pounds white mushrooms
  • 4 cloves garlic, minced
  • 6 ounces cream cheese
  • ½ cup grated mozzarella
  • ¾ cup bread crumbs
  • ½ cup grated Parmesan
  • 3 tablespoons fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, heat olive oil and sauté quartered mushrooms seasoned with salt and pepper until moisture evaporates (7–9 minutes). Add minced garlic and cook for an additional minute.
  3. Stir in cream cheese until well combined. Remove from heat and mix in mozzarella, half of the breadcrumbs, and half of the Parmesan.
  4. Transfer the mushroom mixture to a greased baking dish.
  5. For the topping, combine remaining breadcrumbs, Parmesan cheese, parsley, and melted butter; sprinkle this over the mushroom layer.
  6. Bake for 25–30 minutes until golden brown.
