  • 1 1/2 teaspoons vanilla extract
  • 1 3/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 tablespoons unsalted butter for frosting
  • 3 ounces whipped cream cheese (about 1/2 cup)
  • 3/4 teaspoon vanilla extract for frosting
  • 2 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a mini stand mixer, beat together softened butter and granulated sugar until fluffy. Add the egg and vanilla extract; mix until well combined.
  3. Gradually add flour, baking powder, and salt on low speed until just incorporated.
  4. Spread the batter into the prepared pan and bake for about 20 minutes or until a toothpick comes out mostly clean.
  5. Allow to cool completely before preparing the frosting by beating together butter and cream cheese until fluffy. Mix in vanilla extract, then gradually incorporate powdered sugar until smooth.
