Ingredients
- 2.5 lbs pork loin roast
- 1.5 lbs sauerkraut
- 1/4 cup brown sugar
- 1.5 cups apple slices
- 1 bag wide egg noodles
- 1.5 tbsp high-heat oil (vegetable or avocado oil)
- salt to taste
- black pepper to taste (freshly ground preferred)
- 2.5 tbsp chicken soup base
- 2 garlic cloves (finely minced)
- 1/2 yellow onion (diced into 1/2-inch pieces)
- 1 cup water
- 2 tbsp unsalted butter (Kerrygold for richness)
- fresh parsley (chopped, about 2 tbsp)
Instructions
- Preheat a Dutch oven over medium-high heat and season the pork with salt and pepper. Sear until browned on all sides.
- Remove the pork and combine sauerkraut, chicken soup base, brown sugar, garlic, apples, onion, water, salt, and pepper in the same pot.
- Return the pork to the pot, cover, and simmer on low for about 90 minutes until tender.
- Cook egg noodles according to package instructions; drain.
- Slice pork and serve over noodles topped with sauerkraut mixture and fresh parsley.
