  • 1 Tablespoon sesame oil
  • ¼ cup diced onion
  • 2 cloves of garlic
  • 1 tablespoon fresh minced ginger
  • 10 oz ground chicken
  • ¼ cup Tamari (or soy sauce)
  • 2 Tablespoon Thai sweet red chili sauce
  • juice of 1 lime
  • 1 teaspoon maple syrup
  • ⅓ cup chopped cashews
  • ¼ cup chopped scallions
  • ¼ cup fresh chopped cilantro
  • ¼½ cup shredded carrots
  • Sesame seeds for topping
  • 1 head butter lettuce (leaves removed, rinsed and dried)

Instructions

  1. Heat sesame oil in a non-stick skillet over medium-high heat. Sauté diced onion for 2–3 minutes until translucent, then add minced garlic and ginger for another 2 minutes.
  2. Add ground chicken, breaking it apart as it cooks until golden brown and no longer pink (about 3–4 minutes). Season with salt and pepper.
  3. In a mixing bowl, combine Tamari, Thai sweet red chili sauce, lime juice, and maple syrup; mix well.
  4. Pour the sauce over the cooked chicken along with chopped cashews. Toss gently and cook on low heat for an additional 2 minutes.
  5. Remove from heat and stir in chopped carrots, scallions, and cilantro.
  6. To serve, place a generous spoonful of the chicken mixture into a butter lettuce leaf, drizzle with extra sauce if desired, and sprinkle with sesame seeds.
