Ingredients
- 4 pieces salmon fillet
- 1 tbsp butter
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 3–4 sun-dried tomatoes, sliced
- 125ml dry white wine
- 250ml double/heavy cream
- 50g grated Parmesan cheese
- 30g fresh spinach
- Salt and pepper to taste
Instructions
- Pat salmon dry and season with salt and pepper. Heat olive oil and butter in a frying pan over medium-high heat. Sear salmon skin-side up for about 6-7 minutes until golden.
- Remove salmon from the pan. In the same pan, sauté garlic and sun-dried tomatoes over low heat for about 30 seconds. Deglaze with white wine; simmer until reduced by half.
- Add heavy cream and grated Parmesan to the pan; stir until combined. Mix in fresh spinach, then return the salmon to the pan. Simmer gently for an additional 5 minutes until heated through.
