  • 2 cups yellow onion (finely diced, 1 large onion)
  • 1 tablespoon finely minced garlic (4 cloves)
  • 2 tablespoons flour
  • 5 cups chicken broth
  • 4 cups baby gold potatoes (diced, unpeeled)
  • 1 (15.5-ounce) can navy beans
  • 1/2 cup sun-dried tomatoes (finely diced, plus more for garnish)
  • 2 cups half-and-half
  • Basil pesto

Instructions

  1. In a large pot over medium-high heat, warm olive oil and add ground Italian sausage seasoned with salt, pepper, and smoked paprika. Cook until browned; drain excess grease.
  2. Sauté diced onions and minced garlic in the same pot until soft. Stir in flour and cook for 1 minute.
  3. Gradually add chicken broth, stirring until thickened. Incorporate diced potatoes and bring to a boil; then reduce heat and simmer for about 15 minutes.
  4. Add navy beans and sun-dried tomatoes; simmer uncovered for another 5 minutes until potatoes are tender.
  5. Reduce heat to low, stir in half-and-half, and return the sausage to the pot. Serve hot with a scoop of basil pesto on top.
