  • 1 cup coconut milk
  • ½ cup sugar
  • 1 tbsp vanilla extract
  • ½1 cup milk (or evaporated milk)
  • ½ cup quick-cook tapioca pearls
  • 2 cups chilled milk
  • A few ice cubes

Instructions

  1. Prepare tapioca pearls by boiling water, adding pearls, and cooking until translucent. Strain and rinse.
  2. Blend thawed ube, coconut milk, sugar, vanilla extract, and ube extract until smooth.
  3. In a bowl, mix the ube base with chilled milk.
