Ingredients

Scale
  • 1 large head cauliflower (cut into florets)
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1 tablespoon cornstarch
  • 1/3 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 2 tablespoons maple syrup
  • 1 tablespoon soy sauce (or tamari)
  • 1 teaspoon freshly cracked black pepper

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, toss cauliflower florets with olive oil, salt, cornstarch, and garlic powder until well-coated.
  3. Spread the cauliflower in a single layer on the baking sheet and roast for 25–30 minutes, flipping halfway through.
  4. While roasting, make the glaze by simmering lemon juice, zest, maple syrup, soy sauce, garlic powder, and black pepper in a saucepan.
  5. Thicken the glaze with a cornstarch slurry; cook for an additional minute until glossy.
  6. Toss roasted cauliflower with the glaze and serve garnished with green onions or sesame seeds.
