  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup dark brown sugar
  • 5 Tbsp butter (melted)
  • 24 oz cream cheese (softened)
  • 4.4 oz white chocolate bar
  • 6 oz raspberries
  • 3/4 cup white granulated sugar
  • 2 eggs
  • 3/4 cup heavy whipping cream
  • 1 tsp vanilla
  • 2 tbsp plain yogurt
  • 1 1/2 Tbsp corn starch
  • 1 tsp vanilla extract
  • 1 TBSP lemon juice
  • 1/2 Tbsp cornstarch (mixed with a splash of cold water)
  • 4 oz white chocolate (bar or melts) (melted)

Instructions

  1. Preheat oven to 325°F (160°C). Combine graham cracker crumbs, brown sugar, melted butter, and vanilla; press into a springform pan and bake for 10 minutes.
  2. Melt the white chocolate in a saucepan over low heat and pour it over the cooled crust.
  3. In a large bowl, mix softened cream cheese until smooth; add remaining filling ingredients and blend until creamy.
  4. Cook raspberries with sugar, lemon juice, and cornstarch until syrupy; mash slightly for swirling.
  5. Pour half the cheesecake filling over the crust, drizzle raspberry sauce on top and swirl. Add remaining filling and repeat swirling.
  6. Bake for about 85 minutes or until slightly jiggly in the center. Cool gradually, then refrigerate for at least 6 hours before serving.
