  • 2 large ripe peaches
  • 1 cup glutinous rice flour
  • 1/4 cup sugar
  • 1 cup water
  • 1/2 cup cornstarch (for dusting)

Instructions

  1. Boil water in a medium pot. Cut a small cross into the bottom of the peaches and boil for one minute.
  2. Remove peaches and submerge in cold water to cool. Peel and halve the peaches.
  3. In a microwave-safe bowl, combine glutinous rice flour and sugar. Stir in water until smooth. Cover with a wet paper towel and microwave for 1 minute. Stir and repeat two more times until thickened. Cool for 5-10 minutes.
  4. Dust your work surface with cornstarch. Roll mochi dough into circles about 1/6-inch thick, dusting with more cornstarch.
  5. Enclose each peach half in mochi dough, ensuring it’s sealed well, then dust off excess cornstarch.
