  • 3 medium zucchinis
  • 2 boneless, skinless chicken breasts
  • ¾ cup heavy cream
  • 1 cup shredded Parmesan cheese
  • 3 cloves garlic
  • 2 tbsp butter
  • 1 tsp kosher salt
  • 1 tsp freshly ground black pepper
  • 2 tbsp fresh parsley

Instructions

  1. Spiralize or peel the zucchinis into noodles and set aside.
  2. In a large skillet, melt butter over medium heat and cook sliced chicken seasoned with salt and pepper until golden brown, about 5-7 minutes. Remove and set aside.
  3. In the same skillet, sauté minced garlic for 1 minute, then add heavy cream and bring to a simmer.
  4. Stir in Parmesan cheese until melted and smooth.
  5. Return cooked chicken to skillet, add zucchini noodles, and toss to coat in sauce; cook for an additional 2-3 minutes until noodles are slightly tender but firm.
  6. Serve garnished with extra Parmesan cheese and chopped parsley.
